Mint & Feta Pesto

of mint leaves
Juice of a lemon
Salt and pepper
of olive oil
Place mint, Feta, cashews, lemon juice, salt and pepper into food processor. Blitz for about a minute. Scrape down sides.
Slowly add olive oil whilst food processor is on until combined.
Place into an airtight container in the fridge for up to week.
