Mint & Feta Pesto

Servings 12 oz (340g)


  • 2 cups of mint leaves packed tightly
  • ½ cups Feta
  • ½ cup cashews
  • Juice of a lemon
  • Salt and pepper
  • ½ cup of olive oil


  • Place mint, Feta, cashews, lemon juice, salt and pepper into food processor. Blitz for about a minute. Scrape down sides.
  • Slowly add olive oil whilst food processor is on until combined.
  • Place into an airtight container in the fridge for up to week.
