Herb Roasted Chicken Salad

Servings 4 salads

Ingredients
  

  • 6 handfuls lettuce leaves
  • 2 carrots peeled and sliced into batons
  • 1/3 of a cucumber cut into batons
  • 7 oz 200g feta cheese cubed
  • 12 -15 sun-dried tomatoes chopped
  • 1 x HERB ROASTED CHICKEN BREASTS
  • 4 heaped tablespoons ROAST GARLIC MAYO
  • salt and pepper
  • ΒΌ cup toasted sunflower seeds

Instructions
 

  • Take a large mixing bowl and throw in the lettuce, carrots, cucumber, feta and sun-dried tomatoes.
  • Thinly slice the HERB ROAST CHICKEN BREASTS and add them to the bowl along with the ROAST GARLIC MAYO. Season with salt and pepper and toss the salad well.
  • Divide among 4 bowls and sprinkle over the sunflower seeds.
