Grain-Free Granola Bars

Servings 12 bars


  • 2 cups roughly chopped Brazil nuts
  • 1 cup roughly chopped dried dates
  • ½ cup pepitas pumpkin seeds
  • ½ cup sunflower seeds
  • ½ cup roughly chopped dark chocolate
  • ¼ cup black chia seeds
  • ¼ cup melted honey
  • ¼ cup melted coconut oil


  • Preheat oven to 325F (160C). Line a 11”x7” baking pan with parchment paper.
  • Place the nuts, dates, seeds and chocolate into medium sized bowl. Mix well. Place honey and coconut oil into a small microwave safe bowl and place into microwave for 20-30 secs untill melted. Pour over mixture and mix well to combine.
  • Press mixture into baking tray and spread evenly making sure you get into all the corners. Place into oven for 15- 20 minutes.
  • Remove from oven and place onto cooling rack for at least an hour till cooled. Then place into fridge for at least two hours.
  • Take out and slice into 12 pieces and keep in an airtight container.
