How To Make Roast Pumpkin Chunks

Ingredients
  

  • ¼ pumpkin about 2 ¼ lbs or 1kg peeled and roughly diced into 1” squares
  • 3 tablespoons olive oil
  • 1 tablespoon cumin seeds
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon cracked black pepper

Instructions
 

  • Heat oven to 430 (220C)
  • Place pumpkin chunks into a baking tray and toss together with all the ingredients
  • Cook in oven for around 20-22 minutes, stirring the ingredients after half way.
