For our final recipe, let’s do something special.

It’ll take approximately 1 hour and 20 minutes to get this special final dish ready to serve.

But since we have spent the last 29 days in the kitchen cooking up several delicious, simple, and easy to prepare dishes, there is no crime spending a little extra time in the kitchen this evening.

So start early so that you can meet up with dinner time.

This recipe for taco bake is the keto version of this popular Mexican food.

You can serve it with your favorite keto salad.

Usually, you should serve this dish in the same plate used in cooking it—that’s what makes it typically Mexican!

There is enough room for flexibility with this dish.

So feel free to change, add, or adjust anything as long as you remember to keep it keto-friendly.

Ingredients

Ingredients for the crust

  • 4 oz Cheddar Cheese shredded
  • 2 oz Cream Cheese
  • 2 Eggs
  • 1 teaspoon Olive Oil
  • ⅓ cup Heavy Cream
  • ½ teaspoon Taco Seasoning

Ingredients for the topping

  • 4 oz Cheddar Cheese shredded
  • 3 oz Green Bell Pepper chopped
  • 2 teaspoon Taco Seasoning
  • 1 tablespoon Olive Oil
  • 1 tablespoon Onion chopped
  • ½ lb Ground Beef
  • ¼ cup Tomato Paste
  • Salt and Pepper to taste

Ingredients for the extra topping (optional)

  • 2 tablespoon Sour Cream
  • 1 medium Jalapeno sliced
  • 1 oz Mozzarella Cheese

Instructions

Directions for the crust

  • In a bowl, crack the eggs and mix with cream cheese. Beat together to make a smooth texture. Add the heavy cream and seasonings into the mix.
  • Properly grease the baking dish. Put the shredded cheddar cheese in the baking dish to form a base before spreading the beaten egg mixture into the dish. Spread it evenly to cover the entire dish.
  • Set the oven to 375F and place the baking dish into it. Allow it to bake for 30 minutes before removing. Set aside to cool for about 5 minutes.

Directions for the topping

  • Place a pan on the stove set to medium-high heat. Pour olive oil into the pan and fry the ½ pound of ground beef. Allow it to fry until it turns brown. For extra taste, add pepper, salt, and onion.
  • If you prefer your dish drier, you can strain away the fat. Add the bell pepper and seasonings into the pan containing the beef. Add in the tomato sauce too.
  • Sprinkle a good amount of mozzarella cheese on top of the crust for extra cheesy texture. Also, add the toppings on top of the crust. To give it some additional spicy taste, add jalapeno slices.
  • Place it in the oven set at 350F and allow to sit in the oven for about 20 minutes. When the cheese becomes bubbly, remove from the oven.
  • You can add the 2 tablespoons of the sour cream (if you want) before serving. You can have this with a low-carb salad.
