Keto Chicken Casserole with Jalapeno Poppers

If you are on a keto diet and haven’t tried the jalapeno popper chicken casserole, then you really should consider doing so.

It is a low-carb casserole specifically designed for keto dieters.

It looks and tastes really delicious and makes a really awesome family dinner.

You’re going to need chicken wings and thighs, jalapenos, bacon, and cream cheese as the main ingredients.

If you buy the chicken with bones and skin, you will have to remove the bones and skin before you add cream and cheese to it.

In this recipe, I used chicken thighs, but you can use chicken breast if you prefer it.

Feel free to adjust the amount of spice to suit your taste.

The jalapeno popper chicken casserole is so delicious I am going to share 2 different methods of preparing it.

You can choose any method that appeals to you, or you can try both methods.

This dish will go well with lettuce salad so remember to include it to make it a complete family dinner!

Keto Chicken Casserole with Jalapeno Poppers 1

Ingredients

  • 6 Chicken Wings
  • 1.5 lb Chicken Thighs skinless and boneless
  • 5 lb Cheddar Cheese sliced
  • 4 slices Bacon
  • 3 medium Jalapenos fresh
  • 2 tablespoon Mayonnaise
  • 10 oz Cream Cheese
  • 1 clove Garlic minced
  • Coriander Leaves for decoration
  • 1 tablespoon Hot Sauce keto-friendly, optional
  • Salt and Pepper to taste

Instructions

  • Set your oven to 350F and allow to preheat while you prepare the dish.
  • Wash the chicken wings and thighs and towel dry properly.
  • Place in a bowl and marinate with minced garlic, pepper, and salt. Set the wings and things in a baking sheet and place in the preheated oven. Allow it to bake for 40 minutes.
  • While the chicken meat is baking, set a nonstick skillet on a stove set to medium-high heat and sauté the jalapenos and sliced bacon in it. Allow the bacon fat to melt completely and let the bacon becomes golden and crisp.
  • Add mayonnaise, cream cheese, and the keto-friendly hot sauce to the bacon and jalapenos. Stir very well to make they are well combined before removing from heat.
  • Now remove the baked chicken and set aside to cool for a few minutes. Cut the chicken thigh into small pieces. Keep the chicken wings for later use.
  • Place the pieces of chicken thigh in a baking dish. Scoop several spoonfuls of the creamy bacon and jalapeno mixture and spread over the chicken. You can place sliced cheddar cheese or mozzarella (or a combination of both) on top of the chicken.
  • Place in the oven and bake again for an extra 10 minutes until the cheese is melted.
  • Remove from oven and garnish it with the chicken wings and sliced chopped coriander leaves.
  • Best served in a plate alongside lettuce salad.

Keto Chicken Casserole with Jalapeno Poppers 2

Ingredients

  • 1 lb Chicken Breast cooked
  • 4 slices Bacon
  • 4 Jalapenos
  • 3 cloves Garlic
  • 2 tablespoon Coriander fresh
  • 2 cups Cheddar Cheese
  • 1 tablespoon Butter
  • 1 cup Cream Cheese
  • ½ cup Chicken Broth
  • ½ cup Onion diced
  • Salt and Pepper to taste

Instructions

  • Set your oven to 400F to preheat while you get the dish ready.
  • Cut the chicken thigh into small chunks and set aside. Slice the onion, garlic, and bacon into small pieces.
  • Place a frying pan on a stove set to medium heat. Put the butter in the frying pan and add bacon, garlic, and onion. Fry them for 10 minutes until cooked.
  • Into the frying pan, add the jalapeno, pepper, coriander, and salt, and then allow to cook for 2 minutes more.
  • Pour in the chicken broth and add cream cheese. Divide the cheddar cheese into two parts and add one part into the mix. Set aside the other part. Allow the mixture to boil then simmer for about 10 minutes during which you should stir occasionally to prevent it from sticking to the bottom of the frying pan. When the creamy mixture becomes thick, remove from heat.
  • Place the chicken in a baking dish then pour the creamy mixture on top. If one baking dish is not enough, you can use two baking dishes. Now add the other part of the cheddar cheese unto the baking dish and place in the preheated oven. Allow it to bake until the cheese melts. Usually, baking should be done for 15 to 20 minutes or until it turns golden.
  • You can add coriander, slices of jalapenos, and bacon bits as toppings.
  • Serve and enjoy with a salad.
