Easy Creamy Bacon, Spinach and Shredded Chicken

This is exactly what we are doing for dinner today using a fine combination of chicken breast, spinach, bacon, and cream cheese to make a healthy and delicious creamy dish.

For an extra special touch, throw in some mushrooms!

It’s quite easy to make this one, so let’s get to it.

Easy Creamy Bacon, Spinach and Shredded Chicken

Ingredients

  • ½ tablespoon Black Pepper
  • ½ cup Spinach chopped
  • 1 Chicken Breast boiled
  • 1 slice Bacon chopped
  • 1 tablespoon Italian Seasoning
  • 1 tablespoon Onion sliced
  • 1 tablespoon Salt
  • 2 tablespoon Butter
  • 2 tablespoon Cream Cheese

Instructions

  • Boil the chicken and allow to cool a bit before neatly shredding with your hands or with a fork. Set aside.
  • Place the melted butter in a frying pan and add the chopped bacon. Fry lightly until the bacon begins to produce fat. Now carefully place the shredded chicken in the pan. Allow to cook for between 2 to 3 minutes tops.
  • Add the sliced onion and chopped spinach into the pan. Allow a couple of minutes for the vegetable to soften.
  • Add the cream cheese unto the mix and continuously stir. Make sure ingredients are well blended.
  • Add salt, black pepper, and the Italian seasoning to give extra flavor.

    OMG, do NOT add any salt to this! I was looking for a way to use up a leftover chicken breast and some spinach, but even with 1/4 the teaspoon of salt that I used, it's way too salty.. It's really a nice little dish, though. I would add way more spinach and absolutely no salt. The bacon adds enough. Would definitely make this again with the few tweaks :-).

    1/2 tbsp of black pepper and 1 full tbsp Italian seasoning for 1 chicken breast — is that right!? I followed the recipe exactly and could not get a bite of this down

    Was looking for a replacement to one of my favorite F75 meals and I think this would actually be pretty close with less seasoning?? Going to be awhile before I can attempt again whew
