I don’t know about you but my weeknights can be pretty hectic at times. On these nights the first things I do is gravitate to the fast food pamphlets that are stuck on my fridge. Then look for the easiest and fastest option. With the place that offers free home delivery usually being the winner. Lazy I know!! Then call them up, wait impatiently for it to arrive, and then proceed with stuffing my face with whatever bad choice I have made.

But when you start to notice that one hectic night a week turns into two hectic nights a week and then ever dang night of the week is hectic, and all you are consuming is takeaway foods, well then you got yourself a problem. The one cure to end this lazy pattern is to grab those pamphlets, kiss them good-bye and throw them in the bin. This may be hard, but ohhhh soooo worth it. Your body, mind and all that jazz will love you for it.

So lately I have been trying out a whole lot of new recipes, that will not only be on the table in as little time as possible, but will also be packed with goodness and nutrition, like my GOJI BERRY AND KANIWA SALAD, SIMPLE SUPER LOW-CARB SALMON and my ISRAELI COUSCOUS SALAD. And this soba noodle dish is my newest hectic weeknight fave.

If you haven’t tried soba noodles before, then this is your chance to use them. These spaghetti like noodles are made from buckwheat, which is a pseudocereal like quinoa. This means that they come from a seed of non-grasses, but still have the ability to be used like a grain. The health benefits of soba noodles definitely out weigh that of other Asian noodles. They are high in protein and soluble fiber, very low in fat and are low GI. They also are a good source of manganese and thiamin. Plus they add a great depth of flavor to whatever kind of dish you add them to.

Toss these delicious, healthy noodles with a good helping of my NORI PESTO, which is also packed with health benefits and is super amazing for you, with slithers of omega-rich cold smoked salmon. Then to top the dish off add a sprinkling of fried shallots for crunch.

And there you have it a simple and easy meal that can be made in less than 30 minutes. A meal that is packed with spectacular flavors and exploding with nutritional value. A must try next time you have one of ‘those’ hectic nights.

Ingredients

  • 180 g soba buckwheat noodles
  • ¾ cup NORI PESTO
  • 100 g sliced smoked salmon
  • ¼ cup fries shallots

Instructions

  • Cook soba noodles according to instructions.
  • Drain the soba noodles, place into a mixing bowl and stir in the NORI PESTO.
  • Break up the smoked salmon into small pieces and stir through the soba noodles. Place into 4 bowls and sprinkle over fried shallots.
