Where would my life be without a smoothie in my hand every morning?

Breakfastless that's what?

Smoothies have pretty much become a lifesaver in my world.

There once was a time before smoothies came into my life.

A time where my body was deprived of anything other than coffee for hours upon hours after waking.

A time where the word breakfast was not even in my vocabulary.

A time when I wondered why I was feeling so sluggish and moody all the time, well right up until I ate lunch that is.

For years and years, I followed this path.

I just never had enough time to incorporate breakfast into my life.

That was until I got a blender and it changed my life.

I have always been one of those kinda people who wake up and mornings just don't quite mix together right.

Anyone that has seen me at this time of the day would agree that I resemble nothing less than a real-life walking zombie.

Just think walking dead but without all the gore.

I don't know what it is but my brain and body just do not function quite right for at least a few hours after waking.

As you can imagine this makes getting ready in the morning hours a real chore.

And even though I give myself a good couple of hours more than most would get ready, I still struggle to find time to eat breakfast.

But that all changed when that blender entered my life.

No longer did I have to worry about making breakfast and eating it.

Now all I needed to do was chuck everything in, blitz it up into smoothie form and chug it down.

And what a difference it made.

No longer was my body deprived.

No longer was I sluggish and moody.

And no longer was breakfast the forgotten meal of the day.

Now I have a smoothie EVERY single day!!!

Sometimes I make our Matcha and Kiwi Fruit Smoothie and I also love our Tropicana Smoothie.

And I so can't wait for peach season again so I can start having our Stone Fruit Smoothie and Peach, Banana, Coconut and Spinach Smoothie.

But my latest fave is definitely this Blueberry, Orange and Coconut Smoothie.

Blueberry, Orange and Coconut Smoothie

I am a massive fan of blueberries.

I love how those little bluey-purples guys are bursting with antioxidants, flavor and lots of other good stuff for us.

And I think you guys are going to love how I combine them with their Vitamin C enriched citrus buddy, Orange.

These two together give a great combination of tartness and sweetness to the smoothie.

Plus I love the freshness that the orange gives.

I use a frozen banana in this smoothie, but you can always use a fresh banana too.

I just love how the frozen banana adds an extra creaminess to the smoothie.

And if you haven't tried using a frozen banana in your smoothie before, then let this Blueberry, Orange and Coconut Smoothie be the one that you try it on.

The Greek yogurt mixed with the frozen banana is what gives this smoothie its extra creamy texture, which I find is needed when using non-dairy milk substitutes.

Which is exactly what I have used here.

Coconut milk is basically my go-to milk at the moment.

I just love the subtle sweet coconut flavor that it gives to my daily fix.

Blueberry, Orange and Coconut Smoothie

Servings: 2 smoothies

Ingredients

  • 1 orange peeled and chopped
  • 1 frozen banana pre-chopped and frozen or use chopped fresh banana
  • 1 cup frozen blueberries
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 cups coconut milk

Instructions

  • Place all ingredients into blender and blend till smooth. Divide between two glasses.
