Red Bell Pepper Pesto

This vibrant, dairy free pesto has a fantastic smoky flavor and will make a great addition to your homemade pesto repertoire.

I think I will have to call this ‘The Year of the Pesto’ as this is the fourth one that I have posted so far this year. But I just can’t stop making them, plus I love to share my pesto ideas with you guys. Cause I mean who doesn’t love having lots of different pesto in their lives. Right?

Red Bell Pepper Pesto

It all started when earlier this year I came across these gorgeous bunches of purple basil at my local farmers market. They were just so pretty and I loved their deep dark purple color so much that I just had to buy them. All blitzed up they turned into my FIRST PESTO post and then I made this delicious PASTA with it.

The second pesto I shared with you was my fresh and flavorful CILANTRO PESTO, which I made this fantastic SALAD with. Then I shared my wacky NORI PESTO, which I used with this quick and easy NOODLE recipe. And now I share with you my Red Bell Pepper Pesto.

Red Bell Pepper Pesto

Like with all my others, this pesto is super quick and easy to make, like literally only takes minutes to blitz up in your food processor. But the only thing that you do need to have for this pesto is some pre roasted red bell peppers. A few weeks back I shared a post showing you how easy it is to make these at home; they make a great staple for anyone’s arsenal and are so much better than store-bought. You can check that post out HERE, but if you’re stretched for time or just feel like being lazy, no judgments here, store-bought will work just fine.

There are two things that I hope you will love about this homemade pesto, the first being the fantastic smoky flavor it has, due to a good sprinkling of smoked paprika. The second being the absence of cheese, which trust me is not needed or missed, making this pesto 100% dairy free.

I hope you will also love how incredibly versatile this pesto is. It can be eaten with pretty much anything including pasta dishes or salads LIKE THIS ONE. I even enjoy eating it as a dip with corn chips and raw vegetable sticks, cause it is just that good. It will last for 3 days when kept in an airtight container in the fridge.

Ingredients

  • 2 red bell peppers roasted and peeled
  • 2 cloved garlic
  • ½ cup cashew nuts toasted
  • ½ teaspoon smoked paprika
  • ¼ cup olive oil
  • good pinch of salt

Instructions

  • Simply place all the ingredients into the bowl of a food processor and process until well combined.
